Mother's Day is around the corner. Moms everywhere will be getting breakfast in bed. Which is why you're probably searching for the perfect, most mouth-watering menu for Sunday morning. But you don't want to blow your diet in the process, right? Luckily, you can combine those two little wishes with this simple, low-fat veggie omelet. If it's a little too disgustingly healthy, you can serve it with a nice sparkling Mimosa! Indulge!
Other treats you can request -- or include -- to make the ideal vegetarian Mother's Day breakfast? How about:
A slice of toasted rye or wheat toast with low-cal butter spread
2 veggie sausage links (I like Morningside brand)
Low-fat fruit yogurt
Hot coffee or tea
Fresh-squeezed orange juice ... with a splash of bubbly, if you're so inclined
A red rose and a kiss (sweet, right?).
And if you need it, here's that quick and easy vegetable omelet recipe, with a few extras thrown in.
- 3 egg whites
- 1 tablespoon nonfat milk
- 1/2 tsp dried mixed herbs
- Freshly ground black pepper
- 3/4 cup chopped fresh baby spinach
- 1 tablespoon reduced-fat shredded sharp cheddar or grated parmesan
- 1 medium tomato, diced
- 1 sprig of basil or parsley
Combine egg whites, milk and herbs in a small bowl.Coat a small nonstick skillet with cooking spray. Heat the skillet on medium to low heat. Add chopped spinach. As it wilts, pour egg white mixture over the spinach and allow to set around the edges. As the edges set, lift them gently with a spatula and tip the skillet to allow remaining liquid underneath to cook. When the egg whites are set, sprinkle the cheese and diced tomato on top, then fold the omelet in half. Cook to your liking, then garnish with a sprig of basil or parsley.
