Yup, it's time to leave behind those sleepy wintertime casseroles and have a little something crisp, light, and colorful. All those happy salad vitamins feel so energizing, don't they? It's just what we're craving right now and there are so many tasty salad possibilities out there. Here are the best salads you could be noshing right now!
Super-Simple Green Salad With Sesame Dressing
- 1 pound mixed greens
- 1 avocado
- 1 tablespoon mustard
- 1 teaspoon honey
- 1/4 cup sesame or sunflower oil
- 1/4 cup apple cider vinegar
- 1 tablespoon toasted sesame seeds
- Salt and pepper to taste
Combine mustard, honey, oil, and vinegar in a bowl. Whisk together until combined. Toss greens in dressing. Slice avocado and arrange over greens. Sprinkle with sesame seeds, salt, and pepper.
Napa Cabbage Salad With Buttermilk Dressing: This is a salad I make over and over again -- it's one of my all-time favorites. And that dressing is great on just about any salad, so I always make double (or quadruple!) and keep it in a jar in the refrigerator.
