Happy almost-Good Friday! For observant Catholics, this isn't so much a holiday as a holy day, a day of sober observance. The Easter feast is still a few days away and it's time to slow down and have a simple, meatless meal. That doesn't mean it can't still be delicious, though. We've rounded up some tasty Good Friday recipes to feed your body and soul.
Tuna Noodle Casserole: I see it again and again. Somehow, for many people, it's just that perfect combination of fish, fun, and nostalgia. Here's a classic tuna noodle casserole recipe. And here's an update of the classic using hearts of palm and capers.
Fish Stew or Soup: A simple clam chowder would hit the spot, especially if it's a little chilly where you are. Or there's Rachael Ray's Cod-and-Shrimp Stoup with Salt-and-Vinegar Mashed Potatoes.
Eggs! Good Friday for many people isn't just about going meatless -- it's going without fish as well. Eggs are a great option, like fried eggs with spring vegetables (skip the oyster sauce if you think it's weird). Or this chickpea frittata -- swap in any other veggies you like.

I love tuna noodle casserole! Except when people put peas in it. My mother used to make it both ways, and I always wanted to ask her why she would want to ruin a perfectly good tuna casserole with peas. :P
