This is about the time of year when a getaway to a tropical destination like Hawaii sounds better than ever to bust the winter blues. For most of us, such a budget-busting trip isn't a possibility (sigh), but that doesn't mean we can't dream ... and dine on some Hawaiian-inspired cuisine while we do.
This Hawaiian chicken over rice I found at Like Mother, Like Daughter - Food is made in a slower cooker so it's easy and delicious. With pineapple and a sweet and tangy sauce, the chicken is tender and tasty. Kids love it, and it's great as leftovers as well -- if there's any left. Aloha!
Hawaiian Chicken Over Rice
4 chicken breasts
1/2 cup bbq sauce
1/2 cup teriyaki sauce
1/2 cup water
12 oz can pineapple
Rice (I like brown)
Put chicken breasts, bbq sauce, teriyaki, water and pineapple into the crock pot.
Cook on low for about 5-6 hours or on high for about 3, until chicken is cooked thoroughly and shreddable.
Shred chicken and return to the crock pot while you cook the rice.
Cook rice according to package directions in a pot, or with a rice cooker.
Serve rice topped with chicken mixture and lots of sauce.
