Quick & Dinner-Perfect BBQ Chicken Pizza

BBQ chicken pizzaI've been called crazy for it, but I really do love taking "bad"-for-you dishes and turning them into something healthy and out-of-this-world delicious. It almost feels like I've accomplished the incredible when I'm able to make an ooey-gooey cookie or decadent pasta dinner healthier and it passes the "OMG, wow, delish!" taste test with my boyfriend or our family or friends. Seriously, there's no reason you should have to deprive yourself of things like that -- even if your New Year's resolution is to shape up, slim down, or stay fit.

Pizza's one of those things that is 1.) so easy to make and 2.) so easy to make healthier. Hence why it's one of the most perfect quick healthy meals out there. Check out this recipe for protein-packed Barbecue Chicken Pizza, and I'm sure you won't be disappointed!

  • 1 cup thinly sliced yellow and red bell peppers
  • 2 teaspoons olive oil
  • 1 pound pizza dough (try whole wheat for extra fiber)
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup Fontina cheese
  • 1 rotisserie chicken
  • 1/4 cup barbecue sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup finely chopped parsley


  1. Preheat oven to 500°F.
  2. Sauté yellow and red bell peppers in olive oil.
  3. Roll out a pizza dough to a 15-inch round, and top dough with mozzarella cheese, Fontina cheese, and sautéed bell peppers.
  4. Bake the pizza for about 12 minutes or until the crust is golden brown.
  5. While the pizza is cooking, cut 1 1/2 cups breast meat from a rotisserie chicken into bite-size pieces. Toss the warm chicken pieces with heated bottled barbecue sauce.
  6. Remove the pizza from the oven, and evenly arrange the chicken on top. Sprinkle with salt and pepper, and top with parsley. Cut pizza into slices; serve.

Yields 5 servings (serving size: 1/5 of the pizza).
