Craveable Chicken Caesar Sandwiches

chicken caesar sandwichI adore salads and have tried hundreds of thousands in my dining days. From chopped to grilled, I've tried them all. But one rises to the top of the lettuce pile like none other -- the chicken Caesar salad. Simple, and flavorful, it's a salad that -- when done right -- satisfies like no other.

As much as I love salads though, sandwiches are even better. So taking all of that that goodness and turning it into a sandwich just ups the game. I'm not talking about one of those sandwiches in which a regular old salad is just shoved between some bread or into a wrap, but a real chicken Caesar sandwich that makes a few extra carbs worth it.

This recipe from Yummly is fantastic as many of the flavors are baked right into the chicken. They only thing I add is some fresh, thinly shaved parmesan cheese at the end.


Chicken Caesar Sandwiches

16 ounces of boneless, skinless chicken breast
1/3 cup mayonnaise
1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 teaspoons fresh parsley minced (optional)
1/4 cup Caesar salad dressing (your favorite kind -- homemade or bottled)
4 hard rolls, split
Romaine lettuce
Tomato slices
Shaved Parmesan cheese slices (optional)


Flatten chicken to 1/4-inch slices.

Spread mayo on both sides.

Combine bread crumbs, parmesan and parsley and sprinkle over chicken. 

Bake uncovered at 375 for 25-30 minutes or until chicken is cooked through.

Spread Caesar dressing on rolls, then top with lettuce, tomato, cheese slices and chicken.
