Here's to more time hanging out, less time working in 2012! After all, it's much more fun to sit down with your family than to race around the house getting it together while shouting at them to wake up already. So in the spirit of making life easier, and a heck of a lot more pleasant, let's start with breakfast.
I definitely love a big breakfast of bacon and eggs. Throw in some waffles and I'm way ready to go for the day. But we all know that's not realistic, especially if you're cooking for a crew of people who need to get to school or work. So instead, rotate these make-ahead breakfast dishes into your routine and your family will be well-fed and relaxed at the beginning of the day.
Breakfast Casserole
A dish that you make the night before, then pop in the oven in the morning, this breakfast casserole can be made vegetarian by substituting mushrooms, asparagus, or your favorite vegetable for the sausage.
Ingredients
1/2 pound browned sausage
4 eggs
1/2 cup grated cheese of your choice
1 teaspoon salt
1 teaspoon ground mustard
4 slices of bread, crumbled
1. Brown sausage and drain, set aside.
2. Beat eggs, cheese, salt, and mustard together in medium bowl. After well-mixed, add bread and mix until softened.
3. Add sausage to mixture, then pour into a 9 X 11 baking dish. Cover and place in the refrigerator overnight.
4. In the morning, pre-heat oven to 350 degrees. Bake at 350 for 45 minutes or until top is browned. Let cool for 5 minutes and serve.
As delicious as it sounds, making this bread before bed will get you a very happy breakfast crowd in the morning.
Add some health foods to your muffins and you won't feel like you're having for dessert for breakfast. But your taste buds will still think you are.

On weekdays, we usually only have cereal or yogurt and fruit, or cheese toast and fruit. Oatmeal and cream of wheat are also quick and easy.
