Dreamy, Delicious Hot Cocoa Cookies

chocolate chocolate chip cookiesAs soon as the weather turns even slightly chilly, my go-to evening sweet fix goes from fro yo to a steaming hot mug of hot cocoa. With a generous handful of mini marshmallows, of course! And there's nothing like curling up and sipping a cup of hot cocoa during the holidays. I love experimenting with different variations -- a dash of peppermint oil, a pinch of cinnamon, a tiny bit of cayenne pepper. Mmm.

But the best variation by far, especially if you're craving something "outside the mug," is hot cocoa in COOKIE FORM. With marshmallow fluff mixed in!!! Ah! How brilliant is that?! Obviously, these amazing cookies are destined to make an appearance in my kitchen and then, the next holiday party I attend. (Oooh, and I bet Santa would like them as well ...)

Hot Cocoa Cookies from HowSweetEats.com

  • 1 cup butter, at room temperature
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup marshmallow fluff
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

  1. Preheat oven to 350.
  2. Cream butter, sugar, eggs, and vanilla until fluffy. Add flour, cocoa powder, baking soda, and salt and mix until combined. Stir in marshmallow fluff.
  3. Fold in chocolate chips and marshmallows. Cover dough with plastic wrap and refrigerate for 30 minutes to 1 hour. Remove, and roll into 1 1/2-inch balls.
  4. Bake at 350 for 10-12 minutes. Make sure cookies are fully cooked, because they will be very sticky from the marshmallows. Allow cookies to cool completely, even sticking them in the fridge for 15 minutes before removing from the baking sheet with a spatula. Be patient and gently remove cookies – let sit another 30 minutes.

Makes approx. 24 cookies.
