If you're still searching for the perfect Christmas cookies, search no more. These amazing chocolate mint surprise cookies I found over at Like Mother, Like Daughter - Food, are just what Santa Claus wants to see on the plate you leave out for him tonight -- trust me.
Fudgy and chocolaty on the outside, there's a creamy, cool mint treat in the middle. Not too much, but rather just the perfect hint of mint amidst all of the chocolate. They're also incredibly easy to make as they start with a cake mix. Just make sure you make enough for Santa AND you.
Chocolate Mint Surprise Cookies
1 box devil's food cake
2 eggs
1/3 cup vegetable oil
1 bag of peppermint Hershey's Kisses
1 bag of mint truffle Hershey's Kisses
Sugar (enough to roll cookies in)
Preheat oven to 350 degrees.
Combine cake mix, eggs, vegetable oil in a medium sized mixing bowl.
Unwrap kisses.
Cover each kiss in a little chocolate cookie dough and roll in a ball.
Roll each ball in sugar.
Spray a cookie sheet with nonstick spray.
Place cookies on cookie sheet.
Bake in preheated oven for 9 mins.
Cool for a couple of minutes on baking sheet and then move to a wire cooling rack.
