5 Fun Twists on Classic Potato Latkes

potato latkesHands down, one of the best things about Hanukkah is the potato latkes. Sure, giving and receiving gifts is fun, and lighting the candles during all eight nights, that's cool too. But doesn't your mouth water just thinking about thin sliced potatoes and diced onions fried to crispy perfection alongside sweet applesauce? What's not to like?!

Mix things up for this year's Hanukkah celebration with one of these five fun twists on classic potato latkes:


1. Potato chive pancakes: Save some sanity with this Martha Stewart recipe that uses thawed frozen hash brown potatoes instead of fresh.

2. Crispy carrot rosemary potato pancakes: Squeeze in some more veggies with this fun latke recipe from Fit Sugar.

3. Zucchini potato pancake: The second I saw this recipe called for beer, I was already sold.

4. Butternut squash and leek latkes with pan-roasted cumin: Usually, I'd be hesitant to make a latke that didn't involve any potato. But lately, I can't get enough butternut squash, and the finished product looks gorgeous!

5. Baked sweet potato latkes: Looking for a healthy twist on the classic fried latke? Swap out your regular spuds for sweet ones, the frying pan for a cookie sheet, and you're in business.


  • 2 pounds grated sweet potatoes
  • 1 medium finely chopped onion
  • 2 beaten eggs
  • 1/4 cup flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg

Instructions: 1. Preheat your oven to 400 degrees Fahrenheit, and spray two baking sheets with cooking spray.

2. Combine all of the ingredients in a large bowl. Take a quarter cup of the mixture and place onto a baking sheet, then flatter with spatula.

3. Bake the latkes for 25 minutes. Flip the latkes, and then bake for another 10 minutes.
