Quick & Decadent Peppermint Fudge

peppermint fudgePeppermint and chocolate are two of those flavors that, at least to me, go together like pancakes and syrup or salt and pepper. The frosty punch of the mint mixed with the creamy richness of chocolate is always a no-fail bliss fix. And while this time of year is probably the most popular for the pairing to show up in designer coffee drinks and desserts, I love it anytime. (You will find me sipping peppermint mocha Frappuccinos in July!)

And that, my friends, is why I am psyched to do up this peppermint fudge recipe to bring to a holiday party. Quick, easy, and decadent, it's sure to satisfy any sweet tooth.

Peppermint Fudge from TasteofHome.com

Ingredients

FUDGE:

  • 1-1/2 teaspoons butter, softened
  • 2 ounces cream cheese, softened
  • 2 cups confectioners' sugar
  • 3 tablespoons baking cocoa
  • 1 teaspoon 2% milk
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup chopped nuts

PEPPERMINT LAYER:

  • 2 ounces cream cheese, softened
  • 2 cups confectioners' sugar
  • 1-1/2 teaspoons 2% milk
  • 1/2 teaspoon peppermint extract
  • 1/4 cup crushed peppermint candy

Directions

  1. Line the bottom and sides of an 8-in. x 4-in. loaf pan with foil. Grease foil with 1-1/2 teaspoons butter; set aside.
  2. In a small bowl, beat cream cheese until creamy. Gradually beat in the confectioners' sugar, cocoa, milk, and vanilla until smooth. Stir in nuts. Spread into prepared pan. Chill for 1 hour or until firm.
  3. For peppermint layer, beat cream cheese in a small bowl until creamy. Gradually beat in the confectioners' sugar, milk, and extract until smooth. Stir in peppermint candy. Spread evenly over chocolate layer. Chill for 1 hour or until firm.
  4. Using foil, lift fudge from pan. Gently peel off foil. Cut into squares.

Yield: 1-1/4 pounds.
