Eggnog Pancakes

eggnog pancakesFriends, I have good news: Eggnog season is here at last! From now until around Three Kings Day, we shall drink 'nog every chance we get. There shall be eggnog, maybe spiked with rum, as we dream by the fire. But not only that -- for my family, there shall be eggnog at every meal, including breakfast! (Honey, please, don't drink it straight out of the carton standing in front of the refrigerator.)

Eggnog is rich and calorically catastrophic enough to serve as breakfast alone. But if that is too much for you, if maybe you wanted breakfast to consist of something more than luscious milk, fat, sugar, and spice, how about some eggnog pancakes? I have the perfect recipe for you -- just in time for the weekend. This one is super simple, easy to whip-up first thing in the morning. Mmmm, these will make my home smell like the holidays when I make them tomorrow!


Eggnog Pancakes from


  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup eggnog
  • 2 tablespoons clarified butter
  • 1 egg, slightly beaten



  1. Heat a lightly oiled skillet or griddle over medium heat.
  2. In a bowl, mix the flour, sugar, baking powder, and salt. Make a well in the center and pour in the eggnog, butter, and egg. Mix until dry ingredients are evenly moist.
  3. Pour 1/4 cup batter onto hot griddle for each pancake. Cook pancakes until bubbly on top. Flip with a spatula, and continue cooking until slightly browned on bottom.
