Sweet Potato Casserole: 5 Twists on This Delicious Thanksgiving Dish

sweet potato casseroleAs Thanksgiving draws near, the anticipation for the big meal is growing. Already I'm pouring over Thanksgiving recipes and imagining the many delicious dishes (and dishes to clean up afterward) that we'll be feasting on in just a few short days.

One of the sweetest spots of the big meal is the sweet potatoes. Not only are they a super food packed full of nutritional goodness, but they're so sweet and delicious, they're almost like eating dessert for dinner. They're also extremely versatile and lend themselves to a variety of different preparations. Here are my five favorite sweet potato casserole recipes.


1. Southern-Style Sweet Potato Casserole

Here's a recipe Kim shared several years back that I've made countless times since. It's really easy, and I love the crunchy pecan topping.

2 big cans sweet potatoes

1 cup sugar

1/2 teaspoon salt

2 eggs

1/2 stick butter

1/4 cup milk

1 teaspoon vanilla

Mix all ingredients well with hand mixer until smooth. Put into casserole dish.

For topping:

1/3 cup flour

1 cup brown sugar

3/4 stick butter

1 cup pecan pieces

Combine topping ingredients with pastry blender or food processor. Sprinkle on top of potato mixture. Bake uncovered at 350 for 40 minutes.

3. Smoky Chipotle Sweet Potato Casserole With Cheddar Cheese Breadcrumb Crust

This savory dish from Rachel Ray is an incredible way to spice things up. The smoky spice of the chipotle peppers blends perfectly with the sweetness of the potatoes. The cheddar cheese on top just puts it completely over the top.

4. Sweet Potato Casserole With Marshmallows

Yum, just yum. If your kids are shy to try the sweet potatoes, this is an easy way to get them begging for them.

5. Copycat Recipe for Ruth's Chris Sweet Potato Casserole

This recipe starts with real fresh sweet potatoes (no cans), and is as the restaurant says, "heavenly."
