Blueberry and White Chocolate Buttermilk Pancakes from Sarah's Cucina Bella


  • 1 large egg
  • 1 cup flour (either whole wheat or all purpose)
  • 1 cup buttermilk
  • 1 tbsp sugar
  • 2 tbsp vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup frozen blueberries
  • 1/2 cup white chocolate chips


1. Beat the egg with an electric mixer until frothy.

2. Add flour, buttermilk, sugar, oil, baking powder, baking soda, and salt. Beat until combined. Fold in the blueberries and chocolate chips.

3. Cook on a preheated griddle (set to about halfway between medium and medium-low) until browned on both sides. Serve immediately.
