Fire up the grill, everybody, it's the last blast of summer and that means you've got to get your outdoor eat on. Of course for those of us with celiac, navigating the BBQ can be a very tricky thing. What with the buns, and the marinades, and all of those deserts that are filled with gluten.
Never fear! There are plenty of great gluten-free options you can whip up and serve to your sensitive guests this weekend. Here's your full menu of flavorful outdoor food for the whole gang.
1. De-Gluten Your Grilled Meats
Americans love hot dogs, but people with celiac disease do not. The casings in many hot dogs can be filled with gluten, so be sure you read the label before tossing some tubers on the grill. Applegate Farms makes a fantastic gluten-and casein-free dog. If you find yourself out of luck, consider substituting sausages from the butcher, after you've asked if the case is safe.
A great steak, fish, chicken or pork marinade does not have to set off the celiacs. A hidden source of gluten is soy sauce, so before you sprinkle it on, pick up some wheat-free Tamari to use instead.
2. Gluten-Free Buns are Everywhere
At the beginning of summer they were scarce, but if you walk into a grocery store this weekend you may be lucky enough to have your pick of gluten-free hot dog and hamburger buns. Udi's, Rudi's, Whole Foods, and Kinnikinnick all make really fantastic versions of the classics.
3. Watch the Potato Salad
Malt vinegars are filled with gluten, so be sure to try a great gluten-free potato salad recipe so no one gets zapped with gluten while enjoying a delicious American tradition. Make it a patriotic potato salad too for the full holiday effect.
4. Load Up On Veggies
Naturally gluten-free, you can just throw some olive oil on your favorite veggies and put them over the fire in a grill basket. If you want to take advantage of the seasonal corn, soak the ears of corn in water (with the husk still on) for 15 minutes, then grill the corn on medium for 15 minutes.
5. Delicious Desserts
Everyone loves cupcakes, and if you want to go for show-stopping gf ones, try this recipe for delicious devil's food cupcakes, and put some sparklers on top.
Gluten-Free Devil's Food Cupcakes
1/2 cup cocoa
2 teaspoons baking soda
1/2 cup water
3/4 cup shortening
2 cups sugar
1 cup buttermilk
2 1/2 cups gluten-free all-purpose flour
1 teaspoon vanilla
1 stick butter
4 Tablespoons cocoa
6 Tablespoons milk
1 box powdered sugar
1. Preheat oven to 350 degrees. Mix first three ingredients together and set aside.
2. Cream shortening and sugar together, then beat in eggs. Add buttermilk and flour alternately and mix well. Add vanilla, then mix in cocoa mixture.
3. Pour mixture into greased and (gluten-free) floured 8 X 13 pan and bake for 45 minutes, or until toothpick comes out clean.
4. Let cake cool while you prepare icing.
5. For icing, bring first three ingredients to a boil. Remove from heat and add powdered sugar. Pour on cake as soon as it is finished.
6. Serve with vanilla ice cream, in a gluten-free cone, or solo.
Say goodbye to summer, in a healthy, gfree way! Always remember, do not grill, prepare or grill gluten-free food in the same places you have gluten. Cross-contamination can send your guests running fo the bathroom.
