Slow-Cooker Steak Fajitas

beef fajitasDust off that slow cooker if you haven't used it an awhile because you're going to want to fire it up for this. Beef fajitas are just the thing to add some spice to your life after a long day. Throw in the ingredients in the morning, and by evening you have tender, savory fajita meat and vegetables ready to be spooned into warm tortillas.

Just top with cheese, sour cream, lettuce, and other vegetables of your choosing, and dinner is served. This recipe from TLC is quick, easy, and muy bien. They are, of course, better when enjoyed with a margarita.

1 beef flank steak (about 1 pound)
1 medium onion, cut into strips
1/2 cup medium salsa
2 tablespoons chopped fresh cilantro (optional)
2 tablespoons fresh lime juice
2 cloves garlic, minced (I use more)
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 small green bell pepper, cut into strips
1 small red bell pepper, cut into strips
Flour tortillas, warmed

Additional salsa

Cheese, sour cream, green onions and any other toppings you'd like to add

Cut flank steak lengthwise in half, then crosswise into thin strips; place meat in slow cooker.

Combine onion, 1/2 cup salsa, cilantro, lime juice, garlic, chili powder, cumin and salt in slow cooker.

Cover; cook on LOW 5 to 6 hours.

Add bell peppers. Cover; cook on LOW 1 hour.

Serve with flour tortillas and additional toppings.
