Tart & Tasty Margarita Cupcakes

margarita cupcakesMargaritas. Cupcakes. Separately, the two of these things are nothing less than decadent. But together? I may as well have died and gone to dessert loving heaven. These margarita cupcakes are the perfect salty sweet indulgence for a steamy summer night.

What's that saying again? One tequila, two tequila, three tequila, floor MORE! Who's with me?


Margarita cupcakes adapted from Brown Eyed Baker:


For the cupcakes:

  • 1 1/2 teaspoons baking powder
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 2 eggs, at room temperature
  • Juice and zest of 1 1/2 limes
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons tequila
  • 1/2 cup buttermilk
  • 1 to 2 tablespoons tequila to brush tops of finished cakes

For the frosting:

  • 1 cup unsalted butter
  • 2 3/4 cups powdered sugar
  • 2 tablespoons tequila
  • 1 tablespoon lime juice
  • Pinch salt


1. Line a cupcake tin with paper liners and preheat your oven to 325 degrees Fahrenheit.

2. Whisk together baking powder, flour, and salt in a medium bowl, then set aside.

3. In a large bowl, beat the sugar and butter together for about 5 minutes, or until light and fluffy. Add the eggs in one at a time, mixing thoroughly. Then, scrape the sides of the bowl gathering your batter at the bottom, and add in lime juice, vanilla extract, tequila, and lime zest. Mix well until combined.

4. Add in the dry ingredients in three batches. In between parts, add in 1/4 cup buttermilk at a time. When all of your ingredients are combined, stir gently using a rubber spatula. Then, spoon batter into muffin cups. Bake until the tops are golden brown, about 25 minutes. To ensure even baking, rotate the pan halfway through.

5. When your cakes are completely cooked, remove them from the oven and allow 5 to 10 minutes of cooling time. Then, brush the tops with the 1 to 2 tablespoons of tequila, and set aside.

6. Now, it's frosting time. Whip the butter on medium high speed for 5 minutes until fluffy. Then, add the powdered sugar gradually until all is incorporated. Add in the tequila, lime juice, and salt, and mix well. If your frosting looks soft, add in some more sugar a teaspoon or so at a time, until you achieved your desired consistency.

7. Frost your cupcakes, and then garnish with a lime wedge and salt. Enjoy!
