Deep Dark Espresso Brownies

browniesAs far as desserts go, brownies are always a crowd-pleaser. If you ask me, there's nothing easier than throwing a batch together when I'm looking for a simple treat to bring to friends.

But why be average when you can be extraordinary, right? Kick it up a notch the next time you bake with these deep dark brownies, which combine chocolate and espresso. You may never go back to that boxed mix ever again!

Deep Dark Brownies adapted from the peche:

  • 1/4 teaspoon Kosher salt
  • 1 tablespoon cocoa powder
  • 3/4 cup all-purpose flour
  • 1 stick unsalted butter
  • 3/4 teaspoon espresso powder
  • 5 ounces semisweet chocolate
  • 1/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 1/2 ounces semisweet chocolate chips or chunks

1. Preheat your oven to 350. Grease an 8-inch square baking pan.

2. Sift the salt, cocoa powder, and flour together into a large bowl.

3. In a large saucepan, combine the butter and espresso powder over a low heat, and stir constantly until the butter melts. Then, add the chocolate and stir for about 2 minutes, or until smooth.

4. Turn off the heat, add the brown and white sugar, and stir until combined. Then in the same pan, add vanilla and eggs; stir again.

5. Pour your mixture into your flour bowl, and combine. Be careful not to over-stir at this step, or you'll get tough brownies! Add in the chocolate chunks, and then pour your mix into the baking pan.

6. Bake for 28 to 30 minutes, remove from oven, and allow adequate time for cooling.
