Grasshopper Cupcakes

grasshopper cupcakesSure there are those who proclaim the nutritional value of insects, but don't worry there are no actual ones in these grasshopper cupcakes. Rather they're a mix of chocolate, mint, and yum. Rich and decadent with a cool hint of mint and a pretty green and brown exterior, these are a great summer treat.

This recipe from Tablespoon is incredibly easy. It uses a cake mix and pre-made frosting; you just add a few extra special touches to make them your own.

  • 1  box (18.25 oz) devil's food cake mix with pudding in the mix
  • 1 1/3  cups water
  • 1/2  cup vegetable oil
  • 3  eggs
  • 1  container (12 oz) fluffy white whipped ready-to-spread frosting
  • 1/4  teaspoon peppermint extract
  • 4  drops green food color
  • 24  thin rectangular crème de menthe chocolate candies, unwrapped, each cut in half crosswise, or chocolate chips for sprinkling on top

Make cake mix into cupcakes as directed on box using water, oil and eggs. Cool completely, about 30 minutes.

In small bowl, reserve 1/2 cup frosting for garnish.

Into remaining frosting, stir peppermint extract and food color until well blended.

Frost cupcakes with green frosting.

Spoon 1 teaspoon reserved white frosting onto center of each frosted cupcake.

Decorate each with 2 candy pieces or a sprinkling of chocolate chips.
