Easy Homemade Ice Cream Sandwiches

ice cream sandwichesI dare you to find somebody who doesn't like ice cream sandwiches. Dare you, I say! I mean, what's not to like, right? It's two of the world's greatest desserts combined into one. It's a mega-dessert. And everybody wins when they eat one.

But have you ever tried making your own ice cream sandwiches? Really, it's very simple, and it's the perfect thing to do with the kids.

You can either go the super simple route: Buy ready-made ice cream, cookies, and of course, sprinkles and chocolate chips for good measure. Or you can go the (slightly) more labor-intensive one: Bake your own cookies. (If you're completely mad, and own an ice cream maker, you can make that fresh, too!)

Here is my favorite version of the classic ice-cream sandwich. Enjoy! And let me know yours!

 

(Chocolate Chip Cookie & Vanilla) Homemade Ice Cream Sandwiches

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) vegan margarine, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large spoonfuls of apple sauce
  • 1 teaspoon of cooking oil
  • 1 package of semi-sweet chocolate chips
  • Vanilla ice cream (You can't go wrong with Breyer's French Vanilla)
  • Sprinkles, chocolate chips, whatever toppings you like

Instructions

1. Preheat the oven to 375° F.

2. Combine flour, baking soda, and salt in a small bowl.

3. Beat margarine, granulated sugar, brown sugar, and vanilla extract in large mixer bowl
until creamy. Add applesauce and oil, beating well after each addition.

4. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.

5. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for two minutes; remove to wire racks to cool completely.

6. Once completely cooled, place one scoop of vanilla ice cream between two cookies*.

7. Eat as is or dip ice cream into chocolate chips, coconut, sprinkles, whatever!

*Yes, these are vegan cookies. Trust me, they are the are just as good, if not better, than the ones with butter and eggs. I prefer these with ice cream sandwiches because they're the tiniest bit lighter than "regular" ones, and it's a nice juxtaposition against the rich ice cream.

It seems kinda funny that you use vegan cookies but put ice cream between them...ice cream is not vegan. I'm not vegan, just thought that was odd.

People mix vegan things and non vegan things all the time. Look at Oreos and milk, classic combination of vegan and not.



I would definitely make the cookies but I don't like ice cream sandwiches. I also hate cake and ice cream. Maybe it's because I didn't grow up with them, I didn't try an ice cream sandwich till my twenties and the classic birthday combo in Scotland is jello and ice cream rather than cake and ice cream, but the whole baked good mixed with ice cream thing is just gross to me.

Also, if you want to make these vegan I highly recommend the So Delicious coconut milk icecream. I bet the cherry amaretto flavor would be wicked awesome in these. You know, if you like ice cream sandwiches ;-)

Kati - are you referring to the fact that a small percentage of the sugar supply might be processed with bone char (but probably isn't since that's more expensive) or the fact that some types that are sold in non-US markets are not vegan? I was only referring to the standard US Oreo, the one that most readers here would be familiar with, which is considered vegan by everyone other than the types who won't use oil or gasoline because it might contain decomposed dinosaurs.

@ Rhonda Veggie - Oreos are vegan? Really? Wouldn't there be milk and butter in the cookie, and then milk in the cream in the center? Hmmm... If not, then cool! :) Learn something new every day.


I think these sound good, though I'd probably use butter instead of any kind of margarine. Ever since I found out margarine was a few chemical equations short of being plastic, I've been running back to butter. Now, nobody tell me about all the things that go into butter! :P
