Fresh Caprese Salad Bruschetta

caprese bruschettaCaprese Salad using ripe tomatoes and fresh basil from the garden or farmers' market is the perfect summer dish. Serving it on a toasted garlic baguette bruschetta-style makes it a little more substantial -- especially for those sweltering nights when it's just too hot to cook. A splash of olive oil and balsamic is all the seasoning you need.


Caprese Salad Bruschetta


  • Baguette, sliced on the diagonal
  • Olive oil
  • 1 clove garlic
  • 2 ripe tomatoes, seeded and chopped
  • 1/2 pound fresh mozzarella
  • Fresh basil leaves
  • Balsamic vinegar
  • Salt and pepper


1. Brush one side of sliced baguette with olive oil and toast in oven at 450 degrees for 5 to 6 minutes or until golden brown. Remove from oven and cool slightly. Rub with clove of garlic.

2. While the bread is toasting, thinly slice tomatoes and mozzarella.

3. Layer toasted bread with mozzarella, basil, and tomato slices. Drizzle with balsamic vinegar and olive oil. Season with salt and pepper.
