Toffee Crunch Cookies

toffee cookiesThere's nothing wrong with your basic chocolate chip cookies (nothing AT ALL), but sometimes I find myself getting into a cookie rut. These toffee crunch cookies are a terrific twist on the classic that will shake things up in your cookie jar.

This recipe from Shugary Sweets is incredible. Not only are there chocolate chips in there, but there are marshmallows, oats, and even crispy rice cereal, which gives it the crunch. The combination is a big batch of ooey gooey goodness.

Toffee Crunch Cookies

  • 2 sticks of butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 Tbsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups quick oats
  • 1 cup crispy rice cereal
  • 1 1/4 cup milk chocolate morsels
  • 1 cup mini marshmallows

Beat butter with sugars.

Add eggs one at a time, then add vanilla.

Beat in flour, baking soda and baking powder. Fold in oats, cereal, morsels and marshmallows.

Drop by 1-2 Tbsp onto a parchment lined cookie sheet.

Bake in a 350 degree oven for 10-12 minutes.

Note: Baking on parchment paper is really important for this recipe.
