Red Velvet Cake Ice Cream

Of course, Ben & Jerry's has a store-bought version, but it's fun to replicate at home using red velvet cupcakes from your favorite bakery (or making your own). There's nothing quite like homemade ice cream to cool you down on a hot day, and with this lovely recipe, you get to have your cake, and eat it, too.


Red Velvet Cake Ice Cream


  • 2 cups cream
  • 1 cup milk
  • 1 teaspoon vanilla
  • 3/4 cup sugar
  • 8 oz. package cream cheese, softened
  • 4 red velvet cupcakes with cream cheese frosting from a bakery (or you can make your own)


1. Combine first four ingredients in a large saucepan and place over medium heat. Stirring occasionally, bring the mixture to 170 degrees F. Remove from heat and allow to cool slightly.

2. Beat cream cheese until it's smooth. Whisk hot milk mixture into cream cheese.

3. Pour mixture into lidded container and refrigerate mixture overnight.

4. Freeze mixture in ice cream freezer according to unit's instructions.

5. While it's spinning, mash the cupcakes -- including icing -- with a fork.

6. Once the ice cream has reached a soft serve consistency, gently fold in mashed cake. Spoon the mixture back into a lidded container and harden in the freezer at least 1 hour before serving.
