Potato Chip Chicken Strips

chicken stripsThey may not be the fanciest of foods, but who doesn't like some good chicken strips? It's like all of the goodness of fried chicken, with no messy bones with which to deal. Plus, the dipping possibilities are endless.

But the same old ones can get a bit tiresome after awhile, which is why I flipped when I found this recipe for potato chip chicken strips.

This recipe from Taste of Home combines all the salty goodness of potato chips with savory chicken. Healthy? No, but you can cut down on the fat a bit by using light sour cream instead of the full-fat version, and sometimes you just have to splurge a bit. You can really add some pep to these by using different varieties of potato chips too -- barbecue, yum!

  • 1 cup (8 ounces) sour cream (light is fine)
  • 1/8 teaspoon garlic salt
  • 1/8 teaspoon onion salt
  • 1/8 teaspoon paprika
  • 1 package (12 ounces) potato chips, crushed
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch strips
  • 1/4 cup butter, melted
  • Salsa, barbecue sauce, or sweet-and-sour sauce


In a shallow bowl, combine sour cream and seasonings. 

Place crushed potato chips in another shallow bowl.

Dip chicken strips in sour cream mixture, then coat with potato chips.

Place in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with butter.

Bake at 400°F for 20-22 minutes or until chicken is no longer pink.

Serve with salsa or sauce.
