'Just Peachy' Peach Cobbler

Peach Cobbler is the quintessential summer dessert simply because it's the time of year when gorgeous, ripe peaches are abundant and everywhere. This recipe from Ruth Reichl is my go-to, because it's so easy and laid-back -- everything you want summer to be. She suggests serving it warm with cream, but I'm partial to a scoop of melty vanilla ice cream over top. Which do you prefer?


Peach Cobbler from Ruth Reichl


  • 4 large peaches
  • 1/2 lemon
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 stick butter
  • 1/3 cup buttermilk


1. Slice peaches into pie plate. Squeeze lemon over fruit. Add sugar and cornstarch stirring gently to combine.

2. Combine flour, baking powder, baking soda, and salt. Cut in butter. Mix in buttermilk.

3. Cover fruit with dough. Sprinkle sugar over top. Bake at 400 degrees until golden brown and bubbly -- about 30 minutes.
