Sometimes, we just need a little fried food in our life. There's nothing wrong with that, right? Frying does, after all, make everything taste better, be it vegetables, or chicken, or ... lobster.
Yes, lobster! If you're gonna fry something during the summer months, what better thing than lobster? It's tasty, it's different, and it's a terribly easy thing to make.
Break out the deep fryer -- or the regular ol' pan and some canola oil, if you fancy -- we're making Lobster Fritters!

Ingredients
- 1 cup flour
- 1 tsp. salt
- 1 tsp. baking powder
- 2 eggs
- 1/4 cup milk
- 1 tbsp. melted vegetable shortening
- 1/2 tsp. cayenne pepper
- 1 lb. lobster from tails, cut in chunks
Instructions
1. Sift dry ingredients together.
2. Add beaten eggs, milk, and shortening. Stir together and add the lobster meat.
3. Drop by tablespoon in deep fat (365 degrees) for 4-5 minutes. (Or on the stove with canola oil.)
4. Serve with green salad and a cold beer.
