So you're a celiac. Or gluten-intolerant, or just plain tired of a muffin and scone-filled brunch. (If it's the latter, what???) Never fear, your brunching days are not over. You just need to start hosting a heck of a lot more, or offering to bring at least half of the offerings. Otherwise you'll be left standing around with a mimosa in your hand and nothing else. Which I totally don't recommend first thing in the morning, unless you want to nap the rest of your weekend away.
Here are some delicious, completely gluten-free brunch options you can serve up, or bring over, to your next mid-morning celebration.
1) Crustless Quiche
Behold the crustless quiche! We all love a quiche or egg-like option when we party early in the day. But the celiac needs to ditch the crust or spend waaay too much time perfecting her recipe for a gf version. Instead, try this crustless quiche recipe. I chose Jarlsberg and asparagus, but you can go with peppers, sausage (g-free, of course), or anything that goes well with eggs.
Ingredients
12 asparagus stalks, chopped into 1-inch pieces
8 eggs, lightly beaten
1 1/2 cups heavy cream
1 1/2 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. pepper
1 1/2 cups shredded Jarlsberg
1. Preheat oven to 350. Bring 4 cups water to a boil, lightly salted. Once boil is rapid, boil asparagus pieces for approximately 1 1/2 minutes. Remove from water; put pieces into ice water immediately.
2. Put eggs, cream, mustard, and seasonings into bowl and whisk. Stir in cheese and asparagus and pour into well greased pan -- either a 9 x 13 or a round pie pan.
3. Bake 40-45 minutes. Remove from oven and let sit for five minutes before serving.
2) Be Fruity
The easiest way to get over the gf hurdle is to serve food that is naturally gluten-free. One option is bacon. A better one (health-wise, not AT ALL yum-wise) is fruit. Perfect your fruit plate and everyone will treat that bizness like candy. May I recommend melons for those picky fruit eaters?

I do gluten free brunch all the time. I do quiche with GF crust, GF coffee cake, and fruit usually. Sometimes I do GF scones instead of the coffee cake. My friends and family rave about my food and no one can even tell that it is GF.
