But my #1 summertime fruit? Blueberries. And how do blueberries taste even better? By combining them with a hearty dose of sugar and ice cream, of course!

Blueberry Balsamic Crisp from How Sweet It Is:
- 2 cups blueberries
- 3 tablespoons of sugar
- 1/8 teaspoon salt
- 1/2 tablespoon flour
- 1/2 cup + 1 tablespoon balsamic vinegar
- 1/2 teaspoon cinnamon
- 2/3 cup oats
- 2/3 cup brown sugar, loosely packed
- 1/4 cup flour
- 1/2 stick butter, softened
- 1 teaspoon vanilla extract
- 1-2 tablespoon sugar for crunch
- Vanilla ice cream
First, preheat the oven to 375. Mix together blueberries with sugar, salt, and 1/2 tablespoon flour in a bowl. Add the mixture of blueberries into a sprayed baking dish (Jessica recommends a 4 1/2 x 6 1/2 dish). Toss the berries with 1 tablespoon balsamic vinegar.
In a separate bowl, combine the cinnamon, oats, brown sugar, and flour. Using a fork or your hands, add the softened butter and vanilla, and then mix the contents. Proceed to layer the crumbly mixture on top of the blueberries. Lastly, sprinkle the sugar on top and bake for 25 to 30 minutes.
While your crisp is in the oven, heat 1/2 cup balsamic vinegar in a saucepan over low heat about 5 to 6 minutes, or until it reduces by half. Allow the mixture time to thicken, and cool. Remove blueberry crisp from the oven, and serve with a scoop of vanilla ice cream and balsamic drizzle.
