Tyler Florence's Grilled Cheese With Apples & Bacon

grilled cheeseI've very recently come into possession of a grill pan and have whiled away hours daydreaming about the many things I plan to cook on it. At the top of the list is grilled cheese -- all melty and buttery and chock-full of delicious ingredients that are admittedly horrible for me, but let's not dwell on the negative, shall we? I love this recipe for Grilled Cheese With Green Apples and Bacon from Tyler Florence, the King of Comfort Food, because it doesn't skimp on the good stuff. I'm going to try it with this incredible sharp cheddar cheese from a local dairy that I bought at my farmers' market, but any brand will work well. It's grilled cheese after all -- how can you go wrong?


Grilled Cheese from The Food Network

  • Dijon mustard
  • 8 slices country-style white bread, sliced 1/2-inch thick
  • 12 ounces cheddar cheese
  • 12 slices bacon, cooked to desired doneness
  • 1 green apple, thinly sliced
  • 3 tablespoons unsalted butter

Heat grill pan or large skillet over medium-low heat. (Or you can use your panini press.) Assemble sandwich: Generously spread Dijon on 4 slices of bread. Top with slices of cheddar, 3 pieces of bacon, and apple slices. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip the sandwich and continue to cook until cheese is thoroughly melted and sandwich is golden brown.
