You're well-aware that tequila and lime taste great in a margarita, but how about in a marinade for grilled shrimp? In honor of Cinco de Mayo -- better known as the perfect excuse to break into the tequila -- we're dishing up an easy recipe for Tequila Lime Shrimp that will really get you in the mood to party. Just marinate for 30 minutes in the refrigerator, then toss on the grill, and dinner is served. Serve with flour tortillas, homemade guacamole, and, of course, margaritas!
Tequila Lime Shrimp adapted from Oprah.com
- 2 pounds shrimp, peeled and de-veined
- 1/4 cup tequila
- 1/2 cup fresh lime juice
- 1/2 tsp. cayenne pepper
- 1 Tbsp. chili powder
- 1 jalapeno pepper, seeded and minced
- Freshly ground black pepper to taste
For marinade: Combine tequila, lime juice, cayenne pepper, chili powder, jalapeno, and black pepper in a medium bowl. Toss the marinade over the shrimp, cover, and let marinate in the refrigerator for at least 30 minutes.
Remove from refrigerator. Thread shrimp on skewers and grill for 3 minutes on each side.
