guacamoleHappy almost Cinco de Mayo! Tomorrow marks the Mexican army's victory over French forces, but mostly, here in the States, lots of people use it as a great excuse to go out after work to crunch on tortilla chips and get sloshed on margaritas! As far as I'm concerned, though, there is one thing I absolutely must have at my Cinco celebration mañana ... guacamole.

It's so beloved because it pairs so well with anything -- tacos, burritos, salads, fish, nachos, etc.! And Eva Longoria, who recently released her own cookbook, Eva's Kitchen: Cooking With Love for Family and Friends, features a signature guac the actress swears by. Chunky Guacamole With Serrano Peppers from Eva's Kitchen: Cooking With Love for Family and Friends


6 ripe avocados, cut into 1/2-inch dice
4 medium ripe tomatoes, cut into 1/2-inch dice
1 large white onion, finely chopped
1/2 bunch of fresh cilantro, leaves chopped
1 serrano pepper, finely minced
Juice from 4 small lemons (about 8 tablespoons)
2 teaspoons kosher salt or to taste

1. In a large bowl, place the avocados, tomatoes, onions, cilantro, serrano, lemon juice, and salt. Stir gently until well combined.

2. Transfer to a serving bowl and serve.

Makes about 8 cups. Olé!
