Eggs are yummy scrambled, fried, and especially baked inside a chocolate cake -- but lots of people draw the line at hard-boiled. This writer included. And that's a shame because besides being such an easy dish, hard cooked eggs are so nutritious and a great lunch or snack, packed with vitamin A, protein, B12, and omega-3s if they are fortified.

So today's egg hunt included recipes that even the most die-hard, hard-boiled egg-phobes would sample. You gotta cook the main ingredient first and there are lots of opinions on what works best. (This is what I do for Easter eggs and it's usually foolproof: Submerge eggs in a saucepan of water, cover, bring water to boil, turn off heat, let eggs sit for 15 minutes, remove from pan, and let cool for 2 minutes before peeling.)

With that out of the way, on to 3 really yummy hard-boiled egg recipes I'm even tempted to try:

Fried Hard Boiled Eggs

Pat and Gina Neely fry everything, why not eggs! (I'm surprised Paula Deen didn't get to this first.) There's even a great video that shows you how easy they are to make, bread, and fry. Anything tastes good fried, I'll bet you can barely taste the egg under all that excellent crunch. It's even worth watching the video if you don't plan to make the recipe because Pat and Gina are just so darn cute together the way they smile, touch, kiss ...

Asian Style Hard Boiled Eggs

What I said about everything tasting better fried? That goes for Soy Sauce too. Also called Umami Hard Boiled Eggs, these little devils are doused in soy, sriracha hot, and nori komi furikake sauces. In other words, you'll be paying a trip to the Asian aisle before you can attempt them.

Hard-Boiled Egg Casserole

I knew Paula wouldn't let me down. You can forget about the low cal here, but this recipe using margarine and two different cheeses screams comfort food. Serve it with a side of ham leftovers for Monday breakfast! The cheesy top browns, but you can also sprinkle with breadcrumbs for an added crunch.
