Who doesn't have lamb on the brain with Easter just around the corner? Honey-Glazed Rack of Lamb is an elegant dish that looks difficult to prepare, but really it's exactly the opposite. After a brief stint in the oven, the gamey meat gets a sweet glaze with honey and fresh mint. It pairs perfectly with other spring dishes -- garlic mashed potatoes, fresh asparagus, baby carrots in brown sugar, it's up to you!
Honey Glazed Rack of Lamb With Mint adapted from Greedy Gourmet
- 1 rack of lamb (6-8 bones)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp butter
- Cooking oil
- 2 tbsps honey
- 1 tbsp chopped mint
Season the lamb with salt and pepper. Melt butter in large saute pan and add a splash of cooking oil. Sear the lamb on both sides until golden brown -- about 2 minutes on each side.
Cover bones with foil (to prevent them from burning in the oven). Cook lamb in oven at 450 for 15-20 minutes. Lamb will be medium temperature. Let rest for 5 minutes.
Mix honey and mint and brush on lamb.
