Is there a more perfect side dish than sweet potato fries? I double dare you to think of something better. They go spectacularly well with any dish -- burgers, steak, meatloaf, basically anything that would benefit from some crunchy potato action. And the best part? This version is baked in the oven -- not fried -- so you don't have to feel guilty. In this recipe, the fries are simply seasoned with salt and pepper, but feel free to experiment with your own seasonings. A little secret? I tend to be partial to curry and/or Parmesan cheese. Yum!
Sweet Potato Fries
- 2 sweet potatoes, peeled and sliced into a "French fry"-shape (about 1/4-inch-thick strips)
- 2 tablespoons olive oil
- Salt and pepper
Toss potato slices in oil and season with salt and pepper. Spray baking sheet with cooking spray. Place potatoes in single layer on baking sheet making sure that they aren't touching each other (otherwise, your fries will be soggy). Bake at 350 until golden brown (about 30-40 minutes), flipping the fries once or twice during the baking process.
