Pesto Pizza With Fresh Basil & Mozzarella

This recipe for Rustic Pesto Pizza is bursting with flavor, makes enough for a crowd, and is done within 25 minutes! As my grandmother would say: Mangia!

Rustic Pesto Pizza from Food Network

  • 2 tablespoons pine nuts, toasted
  • Kosher salt
  • 1/4 cup fresh chopped basil
  • 2 tablespoons Parmesan
  • 1 large garlic clove, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • Ground black pepper
  • 7 ounces prepared pizza dough
  • All-purpose flour, for rolling
  • Cornmeal, for dusting
  • 1 red ripe tomato, thinly sliced
  • 1/4 small red onion, sliced thin
  • 1/4 cup kalamata olives, chopped and pitted
  • 4 slices mozzarella

First things first, the pesto. Crush the toasted pine nuts in a bowl using a wooden spoon or pestle. Add in a pinch of salt, basil, Parmesan, and garlic. Mix with olive oil and season with pepper to taste.

Preheat the oven to 425 degrees, with pizza stone inside.

Knead the dough on a floured surface, then stretch to around an 8-inch diameter. Transfer the dough to wooden pizza paddle dusted with cornmeal.

Spread the dough with the pesto, leaving about an inch around the edges to form the crust. Top the pesto with tomato, onion, and season with salt and pepper. Then place the olives atop the pizza and top with strips of fresh mozzarella.

Slide the pizza into the oven and bake for about 8 to 10 minutes, or when the crust is golden and the cheese is melted.
