A few years ago, I was out of flour, but needed to (or really wanted to, I can't remember) make some cookies. I had everything else I needed, but no flour. So I searched the web for flourless cookies and came across one of my favorite cookie recipes of all time. I've made it countless times since.
They contain peanut butter and chocolate chips, and because there's no flour in the mix, the flavors really come through. Also, they're gluten-free and make a great treat everyone can enjoy if you're cooking for someone on a restricted diet.
Peanut Butter Chocolate Chip Cookies
1 cup peanut butter
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 cup chocolate chips
Stir together all ingredients until incorporated.
Spoon dough using a 1 1/2-inch cookie scoop onto a baking sheet pan lined with parchment paper.
Bake for 9 minutes in an oven preheated to 350 degrees.
The recipe only makes 16 cookies, so I always double it.
