Remember Cracker Jacks? (Really, who doesn't?) This easy recipe for homemade Caramel Corn perfectly replicates that sweet nutty flavor and chewy texture of the nostalgic snack. You can even throw in a few salted peanuts for a crunchy surprise.
It's a fun treat to serve to guests at your Oscar party this Sunday.
Caramel Corn adapted from Food52:
- 6 quarts popped popcorn
- 1 cup brown sugar
- 1/4 cup water
- 8 tablespoons unsalted butter, cut into small pieces
- 1/2 cup heavy cream
- 2 teaspoons vanilla extract
- 1 pinch salt
- 1 1/2 cup roasted, salted peanuts
Make caramel sauce by combining brown sugar and water in small sauce pan and heating on medium high until sugar has dissolved. Cover pan, heat on high, and boil for 2 minutes. Remove lid and continue to boil until syrup turns brown around the edges of the pan. The sauce should reach about 275 to 300 degrees before you remove it from the heat -- check the temp with a candy thermometer. Remove pan from heat. Whisk in butter. Stir in cream, vanilla, and salt.
Line a large cookie sheet with parchment. Next, spread about 1/2 of the popcorn on the parchment. Then drizzle about 1/2 of the caramel over the top of the popcorn. Add 3/4 cup peanuts. Toss until ingredients are integrated. Bake in oven at 250 for about 45-60 minutes, stirring every 20 minutes. Repeat with second batch.
