Delicious & Easy to Make Apple Yogurt Muffins

apple muffinsThese apple yogurt muffins are fun and easy to make. They're great for lazy weekend breakfasts and gift baskets! Best of all, they're not terrible for you.

Kids should have a lot of fun helping with this recipe ... who doesn't love licking the bowl and pouring goo into muffin tins?

Make these muffins in 35 minutes and everyone will love you ... even more than they already do. (Aww!)

Apple Yogurt Muffins


  • 2 cups flour
  • 1/2 cup sugar
  • 1-1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1 cup lowfat vanilla yogurt
  • 1/4 cup lowfat milk
  • 1/4 cup oil
  • 1 tsp. orange zest
  • 2 tbsp. orange juice
  • 1 cup diced apple
  • 1/2 cup raisins


  1. In a large bowl, stir together the flour, sugar, baking powder, baking soda and salt. In a second bowl, mix the egg, yogurt, milk, oil, orange zest and orange juice. Add the wet ingredients to the dry ingredients along with the diced apples and raisins; do not overmix. If you don't like raisins like me, leave 'em out.
  2. Spray two 8 cup muffin tins with vegetable oil spray. Spoon the batter into the tins and bake at 400 degrees for 20 to 24 minutes, until golden brown. Makes 16 muffins.
  3. For a fun Valentine's take on the muffins, pour them into V-day themed cupcake wrapper!
