Yes! It's Eating Day! Otherwise known as Super Bowl Sunday. If you're trying to keep your family healthy but still serve a classic football snack, we've got a creamy spinach dip full of flavor that has about 85 fewer calories than the regular recipe.
Best part is you probably already have three-quarters of all the ingredients at home. It'll take you 15 minutes to pull this together, then it's couch-time for the rest of the night with your family. Enjoy!
Creamy Spinach Dip (adopted from EatingWell.com)
- 1 small shallot, peeled
- 1 five-ounce can water chestnuts, rinsed
- 1/2 cup reduced-fat cream cheese
- 1/2 cup low-fat cottage cheese
- 1/4 cup nonfat plain yogurt
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- Freshly ground pepper, to taste
- 6 ounces baby spinach
- 2 tablespoons chopped fresh chives
Pulse shallot and water chestnuts in a food processor until coarsely chopped. Add cream cheese, cottage cheese, yogurt, lemon juice, salt and pepper and pulse until just combined. Add spinach and chives and pulse until incorporated. Then stir, and serve with pita chips, or whole wheat bread, or baby carrots ... it's up to you.
This will take abot 15 minutes from start to finish -- so easy and so delicious. A serving of a quarter-cup will have about 54 calories and 3 grams of fat. Not bad, not bad at all.
