Everyone loves macaroni and cheese; and everyone loves soup. But the two together, in one bowl? Yep, and what a delicious twist on both.
And really if you've ever had beer cheese soup (yum!), it's not such a big jump from that. It's all the creamy, comforting goodness of mac and cheese but with a little more sauce to it. The following recipe also includes some carrots, so you get in a vegetable too!
Macaroni and Cheese Soup
- 1 small can of chicken broth
- 3/4 cup elbow macaroni or shells
- 2 carrots, shredded
- 2 tablespoons finely chopped onion
- 3 tablespoons butter
- 2 tablespoons flour
- 2 1/2 cups milk
- 1 1/2 cups shredded sharp cheddar cheese
Bring chicken broth to a boil, then add macaroni and carrots. Simmer for about 7 minutes, then remove from heat and set aside.
In a large pot, saute onions in the butter until they're soft.
Reduce heat to low and blend in flour.
Slowly add in milk then stir in macaroni mixture.
Cook, stirring constantly, until thickened. Remove from heat, stir in the cheese until it melts, then serve.
Note: Some cooked bacon crumbled on top before serving makes it divine.
