Most people I know have taco night regularly, because it's a quick-and-easy meal that most everyone likes. But it can also get a little tiresome after awhile. Why not spice up your Tex-Mex meals by adding some enchiladas to the mix?
This is one of the easiest recipes for chicken enchiladas I've found. It requires only a few ingredients, and it can be made ahead of time. It's also a great meal to take to a new mother or family in need or to a pot-luck event.
Easy Chicken Enchiladas
1 1/2 cup cooked chicken, chopped
1 can black beans, drained
2 cups shredded cheddar cheese or monterey jack cheese
2 cups sour cream
Flour tortillas
1 can tomato soup
1 can enchilada sauce
Mix together chicken, beans, 1 cup of the cheese, and 1 cup of the sour cream. Spoon into tortillas (about 8) and roll up.
Mix soup, enchilada sauce, and remaining 1 cup of sour cream together and spoon over filled tortillas. Top with remaining 1 cup of cheese.
Bake at 350 for about 25 minutes, or until bubbly.
Variation: You can substitute plain yogurt for the sour cream.
Chopped tomatoes and green onions sprinkled on top after baking are also a nice touch.
