Spaghetti & Eyeballs: What Are You Lookin' At?

meatballsHave you checked the weather forecast for Halloween? It looks like it's going to be cloudy with a chance of eyeballs.

Spaghetti and meatballs (baked with olives in the middle to look like eyeballs) is not only a festive, easy dinner, it's also a surefire way to make sure your kids eat more than sugar this Halloween. You can even make it healthier by substituting ground turkey for beef and serving over whole wheat pasta.

Who won't get a kick out of the fact that their dinner is watching them?

Spaghetti and Eyeballs (Meatballs)

  • 1 1/2 lb. ground beef or ground turkey
  • 3/4 cup bread crumbs
  • 1/4 cup Parmesan cheese
  • 1 egg
  • 1/4 tsp. pepper
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1 jar olives (with pimentos)
  • 1 jar of your favorite pasta sauce
  • Spaghetti

Mix ground beef, bread crumbs, egg, pepper, Italian seasoning, and salt in a large bowl. Roll into 30 eyeball-sized balls. Push an olive into each eyeball with the pimento facing out. Place the balls into a baking dish, cover, and bake at 350 for 45 minutes (or until cooked through).

Serve over spaghetti and sauce.
