baked potatoWe typically think of potatoes as a side act: mashed, baked, fried. But this filling, starchy vegetable can also be the star of the show -- if we let it.

Some evidence suggests that eating potatoes -- which are packed with vitamin C, potassium, manganese, B6, copper, tryptophan, and fiber -- can help to calm you down and make you look younger. There's no better reason to load up on these five potato main dish recipes.

Baked Potato Bar: Need an easy one-pot dinner idea? Bake potatoes all day in the Crock-Pot. Then, serve with your favorite baked potato toppings: sour cream, chives, bacon bits, steamed broccoli, shredded cheddar cheese, salsa, chili, green onions -- the works! You can even substitute sweet potatoes for a healthier, nutrient-rich alternative.

Potato Soup: Who says soup can't be a meal? A chunky, hearty potato soup packed with leeks and onions can be enormously satisfying, especially if paired with a fresh green salad and cornbread.

Potato Pizza: Take a night off from the red sauce and mozzarella cheese with this twist on a favorite. It's pizza dough topped with ricotta or goat cheese, thinly sliced potato, caramelized onions, rosemary, and garlic. Or, you could go a more classic route with white sauce, potatoes, cheddar cheese, chives, and bacon bits.

Loaded Twice-Baked Potatoes: A favorite childhood side dish, this comfort food can be expanded into a whole meal. Just quickly saute up some lean ground beef and veggies (like broccoli), then mix it with cooked potatoes, cheese, and butter, and into the oven again you go.

Potato Salad: Take potato salad beyond the picnic by adding blanched veggies and cooked shrimp. Just be careful to go easy on the mayo: Low-fat vinaigrette is an even better choice.
