Then, serve with your favorite baked potato toppings: sour cream, chives, bacon bits, steamed broccoli, shredded cheddar cheese, salsa, chili, green onions -- the works! You can even substitute sweet potatoes for a healthier, nutrient-rich alternative.
Potato Soup: Who says soup can't be a meal? A chunky, hearty potato soup packed with leeks and onions can be enormously satisfying, especially if paired with a fresh green salad and cornbread.
Potato Pizza: Take a night off from the red sauce and mozzarella cheese with this twist on a favorite. Loaded Twice-Baked Potatoes: A favorite childhood side dish, this comfort food can be expanded into a whole meal. Just quickly saute up some lean ground beef and veggies (like broccoli), then mix it with cooked potatoes, cheese, and butter, and into the oven again you go.
Potato Salad: Take potato salad beyond the picnic by adding blanched veggies and cooked shrimp. Just be careful to go easy on the mayo: Low-fat vinaigrette is an even better choice.
