August, September, and October are three of the most popular months to get married, according to TheKnot.com. That means we're smack-dab in the middle of wedding season. So it's no surprise that I recently came across a post in the Houston Press about the tradition of eating the top tier of your wedding cake on your first anniversary.
I feel like this is one of those things that most people have heard about, but no one knows exactly why anybody does it. So I did a little research.
The result?
I'm not sure anyone on the Internet has a definitive answer. I can't find much other than "it's tradition," and/or it's a ploy among everyone in your family to get you to do it, too, simply because they were suckered into it, and/or traditional wisdom said you'd have a child by your first anniversary and you could save money on cake by eating defrosted wedding cake at the baby's christening, and/or you can relive the magic of your wedding day.
I'm the type of person who will OD on nostalgia someday, so I'm sure I'll freeze the top tier of "my" wedding cake in keeping with tradition and out of a morbid sense of curiosity about what year-old defrosted cake tastes like. And maybe that's why other people do it, too.
But it's such an elaborate process!
And this post from the Examiner strongly advises against freezing cake because it says white flour doesn't keep well and buttercream/fondant doesn't preserve the cake. The writer also quotes a friend who said eating year-old cake was like "eating sawdust," and says a better option is to find a baker who offers a free anniversary cake.
What's more, I found a website -- DontFreezetheCake.com -- that is intended to be a forum for sharing horror stories about frozen cake ... although, to be fair, there aren't many stories posted.

The three tiers stand for past, present, and future. So you are eating the future -- kind of like sealing in the future or something. I did it. Because I am superstitious like that. We even had to have a friend transport the cake from New Orleans to NYC for us since we were going straight to our honeymoon. It was sealed in one of those restaurant strength vacuum seal for a year. And a year later, we ate it ... well, just one bite and I have to say that it tasted good. And we are still alive!
We never even got to try our cake during our wedding reception. There was just too much going on. So we ate the top tier the day after. LOL
We froze it and on our anniversary I took a taste of the frosting and decided it was a stupid tradition lol.
Yuck!
The only cake that goes in my freezer is ice cream cake. :D
We didn't do it - everyone ate every single bite of our cake. I had no idea about the past, present and future tiers. That is so cool. We have been married for 20 years - so it must be okay if you don't eat the frozen cake! hee hee
We did not have a wedding cake but I have frozen part of my son's b'day cake before and it tasted just fine!
