What to Do With All That Zucchini? 5 Great Recipes (That Aren't Zucchini Bread)

Zuccini CanapesIf you planted a garden this summer, you are no doubt starting to see an abundance of summer squash or zucchini.

Or, if you are like me, and you like eating zucchini more than growing it, you are starting to receive the overflow from co-workers and neighbors.

I love zucchini bread just as much as the next person, and I'm sure I'll make some, but let's not forget these other five things to make with your zucchini crop

Grilled zucchini appetizers (see photo): Grill slices of zucchini and top with goat cheese and tomatoes. You could also swap out goat cheese with a hearty Parmesan or add a little chopped garlic. These bite-sized treats will look as good as they taste.

Huevos Rancheros with zucchini: Wouldn't you be happy to wake up to this dish for breakfast? Zucchini has such a mild flavor that you can add it to almost anything. In this case you can get a serving of veggies first thing in the morning, or you could also serve this for a hearty but easy entree for brunch.

Zucchini saute: Because it's so versatile it goes with well with just about any main course. This quick mix of zucchini and squash just needs a little lemon juice and fresh mint to make a tasty addition to dinner.  

Zucchini, Ham, Basil and Ricotta Fritters:  With eggs, ham, cheese and zucchini, this fritter dish is a complete (and mouth-watering) meal. If you shred the zucchini, a little can go a long way and still provide a nutritious boost.

Zucchini pasta: If you cut out wheat or you’re on a low-carb diet, by simply boiling strips of zucchini you can substitute this vegetable for pasta and toss with tomato sauce or a light drizzle of olive oil.
