Instead of my weekly mom meal pick, I'm going for one of my husband's favorites on the menu: beef short ribs braised in beer. That just sounds manly, doesn't it?
I found this beef and beer recipe in Staff Meals From Chanterelle via Fresh Direct and it's a crowd-pleaser every time I braise it up. This might just be what's for dinner on Father's Day.
The key to this recipe, like most meat recipes, is getting the right cut of meat from a quality butcher. Ribs can get chewy if you go for the cheaper version, or non-existent if you're buying more bone than meat.
Other ingredients you'll need:
3/4 cup canola or other vegetable oil5 to 6 pounds beef short ribs, trimmed of fat4 large onions, halved lengthwise and cut crosswise into thin slices2 tablespoons sugar2 tablespoons all-purpose flour4 bottles (12 ounces each) dark ale or beer8 cups chicken stock4 bay leavesCoarse (kosher) salt and coarsely ground black pepper, to taste
The other fun thing about the braised beef short ribs recipe is you can also cook it up on the grill in your Dutch oven. So if outdoor cooking gives your guy as much pleasure as it does mine, fire up the grill and take your ribs outside.
