Pea Mash With Crispy Prosciutto: Meals With Mileage

My boyfriend and my mom love peas. Me? Not so much. But I decided to give them a chance this week.

They serve them all the time in England -- in mashed form. The bright green mash looks gorgeous, and my mom basically ate them with every meal on our recent vacation.

So, I thought I'd give pea mash a try ...


Pea Mash With Crispy Prosciutto adapted from Eating Well

  • 3 1/3 cups frozen peas (1 pound)
  • 3 tablespoons water
  • 1/4 teaspoon salt
  • 2/3 cup reduced-fat sour cream
  • 1/4 cup minced scallion greens
  • 1/4 teaspoon pepper
  • 3 to 4 slices prosciutto

Heat peas, water, and salt in a medium saucepan over medium-high heat, stirring often, until peas are heated through, 6 to 10 minutes.

Transfer to a food processor; pulse with sour cream, scallions, and pepper until a chunky puree forms.

In oven on 350 degrees, crisp prosciutto 5 minutes or so. Crumble and sprinkle on pea mash.
