Leftover Cream? Make Tomato Cream Sauce Over Pasta

Because we're featuring heavy cream recipes this week, it's only fair to mention one of the minor annoyances of cooking with this ingredient. Often a recipe will call for only two tablespoons of heavy cream -- and then what do you do with the rest of the pint? Here's an idea: Liven up your boring pasta routine by making tomato cream sauce.


Tomato Cream Sauce

  • 1 to 2 tablespoons olive oil
  • 1 handful fresh basil, chopped
  • 2 cloves garlic, diced
  • Pinch of red pepper flakes
  • 1 (28-ounce) can whole tomatoes
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup heavy cream

Drizzle olive oil in bottom of pan. Add basil, garlic, and red pepper flakes, and allow to fry in oil about 30 seconds -- be careful not to burn. Add tomatoes and break up tomatoes with the back of a spoon. Add sugar and salt and pepper, and simmer 10 minutes. Add cream and simmer 20 minutes until sauce is reduced.

Serve over cooked ziti, rigatoni, or any pasta with grooves that can soak up the saucy goodness.
