Flickr photo by TMAB2003The farmers' markets are bursting at the seams with ripe, fresh strawberries. A simple sauce made with the red sweet berries is the perfect accoutrement to drizzle over ice cream, chocolate cake, pancakes, banana splits, cheesecake -- nearly every dessert. Here are three tasty variations:
1. Blended Strawberry Sauce
Why mess with perfection? Requiring only two ingredients -- sugar and strawberries -- this classic sauce couldn't be simpler to throw together and goes well with pretty much any dessert or sweet breakfast food. Add 1/3 cup sugar to 1 pint washed, sliced berries; heat mixture in saucepan over medium heat for about 5 minutes; allow to cool slightly before blending smooth. Make strawberry sundaes!
2. Strawberries With Orange and Mint
This chunky sauce is particularly lovely over a really chocolaty dessert -- like cake or brownies. Sugar and freshly squeezed orange juice cause the berries to "break down" into sugary goodness. Chop 1 pint of strawberries into little pieces; sprinkle with 2 tablespoons sugar and 2 tablespoons fresh orange juice, and allow to "marinate" for 30 minutes; stir in 2 tablespoons fresh, chopped mint.
3. Strawberry Lime Salsa
This version pairs well with a simple dessert -- vanilla ice cream, for example, or a slice of angel food cake. Chop 1 pint of strawberries, 1 kiwi, and 1 mango into small pieces; toss with 1 tablespoon sugar and 1 tablespoon lime juice; chill. Enjoy!
