Pasta With Broccoli Raab & Sausage: Mom Meals

Yesterday on the Today Show, Mark Bittman showed everyone how to make meals on a budget by limiting the amount of meat in each dish. I'm all for cutting back on meat, and even more for saving money and eating healthy, delicious, easy family meals.

I immediately went to the market and bought the few items I needed to make this pasta with broccoli raab and sweet Italian sausage.

Here's what you'll need: 

About 1 pound broccoli raab, trimmed and cut into pieces
1/3 cup extra virgin olive oil, or more as needed
1 tablespoon chopped garlic, or more to taste
1/2 pound sweet Italian sausage, removed from casings
Pinch red pepper flakes
1 pound penne, ziti, or other cut pasta
Freshly ground black pepper

You almost don't need to even read the recipe as you assemble this quick and easy meal. It's that intuitive. Which I love, because it means I'm not running back and forth to the computer while I'm trying to cook and make sure the kids aren't putting their heads in the oven.

It helps that this dish mimics one in a favorite Italian restaurant my husband and I used to go to in New York. In the spirit of restaurant-dining, I sprinkled a bit of Parmesan on the final dish, even though the recipe doesn't call for cheese.
